The History of Mas Conscience
Between the Devil's Bridge and Saint-Guilhem-le-Désert, legend has it that the monks used to go from village to village asking for alms. They asked the inhabitants to give according to their good conscience! Wine and olive oil were the most common offerings. The monks carried them on the backs of mules, in jars made by the potters of Saint-Jean-de-Fos. With time, these jars took the name of "conscience"! Echoing this legend, the mule and the conscience have become the symbols of Mas Conscience.

Audrey Bonnet-Koenig
From 2015 to 2020, Audrey Bonnet was director of the internationally renowned winery "La Peira", less than 10 minutes from Domaine Mas Conscience. There, she produced some of the region's finest wines, especially the award-winning "La Peira" (AOC Larzac) and "Les Flors".
After working in Denis Dubourdieu's oenology laboratory and in Franschhoek, South Africa, Audrey was technical director of the 175-hectare "Château de Sérame" wine estate from 2006 to 2015.
Audrey Bonnet is originally from Strasbourg in Alsace. She trained as an agricultural engineer in Bordeaux.
Claude Gros
Claude Gros has been working with Audrey Bonnet since 2006. The oenologist and consultant advises well-known clients in the Languedoc, Roussillon, Burgundy and Bordeaux - as well as in California and Washington. Many experts consider Claude Gros to be one of the best and most talented wine consultants in the world.
Stéphane Canaguie
The second in command of Mas Conscience - mainly in the vineyards, but also from time to time in the cellar. In parallel, he also manages his own wine estate, Domaine des Olivèdes, in Saint Jean de Buèges, also in the Terrasses du Larzac!
