The History of Mas Conscience
Between the Devil's Bridge and Saint-Guilhem-le-Désert, legend has it that the monks used to go from village to village asking for alms. They asked the inhabitants to give according to their good conscience! Wine and olive oil were the most common offerings. The monks carried them on the backs of mules, in jars made by the potters of Saint-Jean-de-Fos. With time, these jars took the name of "conscience"! Echoing this legend, the mule and the conscience have become the symbols of Mas Conscience.

De 2015 à 2020, Audrey Bonnet a été directrice de la cave de renommée internationale «La Peira», à moins de 10 minutes du Domaine Mas Conscience. Là, elle a produit certains des meilleurs vins de la région, surtout les primés «La Peira» (AOC Larzac) et «Les Flors».
Après avoir travaillé au laboratoire d’oenologie de Denis Dubourdieu et à Franschhoek en Afrique du Sud, Audrey a été directrice technique du domaine viticole «Château de Sérame» de 175 hectares de 2006 à 2015.
Audrey Bonnet is originally from Strasbourg in Alsace. She trained as an agricultural engineer in Bordeaux.
Claude Gros has been working with Audrey Bonnet since 2006. The oenologist and consultant advises well-known clients in the Languedoc, Roussillon, Burgundy and Bordeaux - as well as in California and Washington. Many experts consider Claude Gros to be one of the best and most talented wine consultants in the world.
The second in command of Mas Conscience - mainly in the vineyards, but also from time to time in the cellar. In parallel, he also manages his own wine estate, Domaine des Olivèdes, in Saint Jean de Buèges, also in the Terrasses du Larzac!
